I think there are two reasons for the salt. First of all, it is a preservative and processed foods wouldn't last as long without it. And secondly, it allows for a bolder flavor, which increases the chance that you'll buy it again if you like it.

I just bought a book about the history and use of salt, though, so I'll find out soon if I'm wrong! Lol.

The salt is a preservative. Your processed foods wouldn't last more than a few days without it. Which would kind of defeat the purpose of buying processed foods.

About the salt...I'm trying to remember that when (IF) I eat my NINE fresh fruits and vegetables, I probably don't have much room left for the processed stuff. I keep thinking: Is it really that much easier to open a container than to wash fresh fruit and vegetables?? And they taste so great!! My two-year-old grandson is a good influence on me. He loves fresh pineapple, "geen bapes" (green grapes), apples, oranges, etc. "A little child shall lead them"...Yep! He leads me. (In more ways than I care to admit.)

The last one touches my heart. At dad's funeral, I saw friends and relatives I haven't seen in years (and whom my teenage children had never met). We vowed to try to see each other more; it's too bad that time and distance always get in the way.

I definitely agree with the last one.

Sodium is so prevalent in packaged goods that I've given up nearly all of them, although I was never much for using them before mr. kenju had the stroke. My exception was an Italian skillet dinner (can't remember the name of the mfg.). They are wonderful and quick, but the salt level is enough to keep you for 4 days!

It's not the salt that's making me crazy; it's the high fructose corn syrup. Gah!
